Now, I've never made a pie before, so I got a little ambitious early on. I was going to make the dough and everything from scratch. Then I realized:
1) I don't have a rolling pin.
2) I'm poor so I didn't want to buy one.
3) I don't have the counter space to roll out pie dough even if I did go out and buy a rolling pin.
But after scouring the internet for the best blueberry pie recipes, I was validated by several sources that said I was not a total failure if I used pre-made pie crust and that it was, in fact, totally acceptable. I took solace in this, and as a result, made this beautiful little blueberry pie mostly free from shame. Like, maybe with just a little bit of shame, but mostly none.
I adapted this recipe from PickYourOwn.org, which lists farms by region where you can pick your own blueberries!
Ingredients:
9-inch frozen pie crust
Filling
3 cups fresh blueberries
2/3 cup granulated sugar
7 tbsp corn starch
3 tbsp water
2 tbsp lemon juice
1/2 tsp cinnamon
1/2 tsp nutmeg or allspice
Crumb Topping
1/3 cup sugar
3/4 cup flour
1/2 cup butter
1. Wash your blueberries in a colander. Pick out any stems or soft ones and pat dry.
2. In a separate bowl, mix sugar, corn starch, water, lemon juice, and spices.
3. Add blueberries to the mixture and coat evenly, folding the sugar mixture over the berries with a spatula. Pour the blueberries and any mixture in the bottom of the bowl into the pie crust.
4. Make the crumb topping by combining butter, sugar, and flour. This is easiest to do in a food processor by roughly chopping them together, but I like to use my hands!
5. Crumble the topping over the pie til the blueberries are mostly coated.
6. Bake for 50 minutes and allow to cool thoroughly. Serve with freshly whipped cream or a vanilla ice cream! YUM!
So, verdict - is it cheating to use pre-made dough?
