Oh man, I love summer. I love drinking outside, and popsicles, and outdoor drinking, and rooftops, and fireworks, and also drinking alcohol while not inside. But when it is 90° outside and I just walked back from the subway and my hair feels like I am wearing a greased Persian cat on my head and and I have severe back-of-the-knee sweat, I don't want to cook anything. Like, at all.
But eating often requires cooking. So I make a compromise. With myself. I make these (EFFING DELICIOUS) turkey burgers on the weekend, and then I'm stocked up on effing delicious for the entire week. Topped with cool, refreshing condiments, a slick of ranch dressing, and sandwiched between toasted, buttered buns, the thought of these lil guys waiting in my fridge when I get home almost makes me look forward to the sweaty walk home.
Almost.
Turkey Ranch Burgers
Recipe by Ampersand Everything
Makes 6 burgers
Ingredients
1lb lean ground turkey
1 egg
1/2 cup seasoned breadcrumbs
1 packet of ranch dip/seasoning
Package of whole wheat burger buns
Butter (optional)
Yum
1. Mix up the turkey, egg, breadcrumbs, and ranch seasoning in a big bowl. I like to use my hands! Mix until all the ingredients are evenly incorporated.
2. Form the mixture into patties. I like to take a fist-sized ball of turkey for each patty, and the mixture should make about six total.
3. Add 1 tablespoon of olive oil to a large frying pan or griddle and heat to medium.
4. Fry/grill the patties, flipping once they brown up, about 3 minutes for each side depending on thickness. Add cheese if desired.
5. Spread butter on buns and grill them facedown in the pan until brown - my favorite part.
6. Build your burgers! I used mayo, ranch dressing, raw onion, tomato, and avocado with a sprinkle of sea salt.
It's pretty much the best summer burger recipe ever. Just saying.
